Ingredients

Bacon lardons

Tikka seasoning

Lamb cutlet

Peas

Stock

Garlic

Salt & pepper

Black pudding

Panko breadcrumbs

Bacon lardons

Onion

Egg


Method

Marinade the lamb in the tikka mix.

Boil the peas in the stock and add the garlic and onions.

Once you have bought it to the boil, turn the heat down and leave it to stew for 15 minutes.

Then add salt and pepper, and blend the mix.

Sear the lamb in a pan, and then add it to a tray and put it in the oven.

Make balls out of the black pudding, dip in egg, cover in breadcrumbs. Deep fry.

Deep fry the lardons.

Ingredients

Flour

Eggs

Caster sugar

Lemon juice - 5 lemons

Icing sugar

Butter

Double cream

Frozen raspberries


Method

Make the shortcrust pastry with flour, eggs, icing sugar and butter.

Mix together and roll out for the tart tin.

For the filling mix eggs, lemon, caster sugar and double cream.

Bake for 20 mins.

Sprinkle with icing sugar.

For the raspberry sorbet, blend frozen raspberries, lemon zest and icing sugar, then freeze.
